Seco Herrerano is Panama’s national spirit, produced by Varela Hermanos in Pesé, Herrera province, from sugar cane grown in the surrounding province. It is triple-distilled to a clear spirit at 35% ABV, drier and lighter than rum, and locally described as standing to rum roughly as grappa stands to wine. Panamanians drink it neat, in cocktails as a rum or vodka substitute, and distinctively with milk or coconut water, the seco con leche served across the country. Exported to over sixty countries but genuinely uncommon on foreign shelves. Please check any applicable alcohol restrictions at your destination before ordering.
